These salt marshes and marshlands are located in the Occitan village of Aigues Mortes in France.
The salt marshes have a very pretty pink hue that comes from the algae Dunaliella. Salt production in Aigues Mortes dates back to Antiquity.
Today, only a dozen or so producers continue to oversee the process of salt formation in the basins. The harvest is done manually given the delicacy of fleur de sel. Aigues Mortes is famous for its medieval walls and for the Salins du Midi—these salt marshes.
